Spaghettini with Shrimp, Tomatoes, and Chile Crumbs

You will need around 45 minutes to prepare this dish. Enjoy!

Ingredients

  • 2 large plum tomatoes
  • ½ pound heirloom cherry tomatoes, cut in half
  • 1 tablespoon red wine vinegar
  • 1 tablespoon grated lemon zest
  • ½ cup and 1 tablespoon extra-virgin olive oil
  • Pepper
  • Crushed red pepper
  • Salt
  • 1 cup dried sourdough bread crumbs
  • 12 ounces spaghettini
  • 1 pound medium shrimp, deveined and shelled
  • 2 tablespoons basil

Directions

  1. Preheat the oven to 450 °F.
  2. Place the tomatoes in a small baking dish and drizzle with 2 tablespoons of olive oil and vinegar. Roast them for around 20 minutes or until the skins loosen. Once cooled, peel the tomatoes.
  3. Now, grate the tomatoes, put them back into the baking dish, and stir. Season them with salt and pepper.
  4. In the meantime, heat 2 tablespoons of olive oil in a large skillet. Add the breadcrumbs and cook them for about five minutes until crisp and golden. 
  5. Then, stir them into the lemon zest. Add a pinch of crushed red pepper and season them with salt. Next, transfer the crumbs into a bowl.
  6. Now, cook the pasta in a large pot with salted water until it becomes al dente. Drain the pasta and return it to the pot. Stir it in 2 tablespoons of the olive oil.
  7. In the large pan, heat 3 tablespoons of olive oil. Season the shrimp with red pepper and salt and cook on high heat for about 12 minutes. Add the basil and pasta and cook for another minute or two.
  8. Once your dish is ready, transfer it to a plate and add the breadcrumbs, cherry tomatoes and tomato sauce.

Lemon Dill Salmon Linguine

This recipe takes only 20 minutes and is a great light dinner or date night dish. This seafood pasta dish name comes from the main ingredients. Here is what you will need:

Ingredients

  • ½ lemon
  • 2 garlic cloves
  • Vegetable stock paste (made with zucchini, olive oil, celery, rock salad, and carrots)
  • Linguine
  • 2 salmon filets
  • Peas
  • Creme fraiche
  • 1 bunch of dill

Instructions

  1. Preheat your oven to 425 °F. Now, peel and grate the garlic, chop the dill, and cut the lemon.
  2. Lay the salmon filets onto a baking tray. Drizzle with oil, season with salt and pepper, and sprinkle over the lemon zest.
  3. Once the oven is hot, cook the salmon for 10-15 minutes. Add the linguine into boiling water while the salmon is in the oven, and cook for about 12 minutes. Also, add the peas at the final minute. Once over, drain the linguine and put it back in the pan. Put oil and stir to prevent sticking.
  4. Then, heat a drizzle of oil in a pan on medium-high heat. Add the garlic and stir for about 30 seconds. Now add the vegetable stock paste and water. Stir the creme fraiche, squeeze lemon juice, and add three-quarters of the dill. Season it with salt and pepper.
  5. Add the cooked peas and pasta to your pan of creamy sauce. Pull the salmon apart into large flakes once it is baked. Next, add the salmon flakes to the creamy pasta and mix it.

Seafood Spaghetti Marinara

This is another one of the many Italian types of seafood pasta recipes ready in 20 minutes.

Ingredients

  • 180 g dried spaghetti pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • ½ onion
  • ½ cup white wine
  • 2 cups tomato passata
  • ½ tablespoons sugar
  • 2 tablespoons chopped fresh parsley
  • 300 g seafood Marinara mix (you can make it your own with fish, mussels, prawns, shrimp, calamari, and a tasty tomato sauce)

Instructions

  1. Put a large pot of salted water to boil.
  2. Cook pasta according to the package instructions; just remember to reduce cooking time by one minute because the spaghetti will finish cooking in the sauce. Reserve one mug of pasta water.
  3. Divide the seafood mix based on cook time. For example, the longest cooking time for fish and medium/large prawns, the medium cooking time for small prawns, and finally, the shortest cooking time for calamari.
  4. Heat 1 and a half tablespoons of oil in a large skillet over high heat. First, add fish and large prawns and cook them for about half a minute. Add small prawns and cook them for around 30 seconds. Then add calamari and cook them for one minute. Transfer all this food to a bowl.
  5. Now, reduce heat to medium-high. Then, heat the last one tablespoon of oil, then add onion and garlic. Cook for three minutes. 
  6. Next, add wine, tomato passata, salt, pepper, and sugar to the boil. Cook for two minutes.
  7. Add seafood, pasta, and ½ half a cup of reserved cooking water into the sauce. Cook for two minutes until the sauce thickens over the pasta. Finally, you can garnish it with fresh parsley.
